Singapore Rice

Singapore Rice is one of my favorite rice after schezwan Rice , infact I prefer Singapore rice over fried rice now . Actually there is a short story behind it , once I had gone to one of the Restaurants in lokhandwala ( Mumbai ) and I happen to order this Singapore Rice , to my surprise it tasted delicious . Though I felt funny at the same time that how did they get the taste , as they have never visited to Singapore and to name a dish on that country was a bit surprising . But I loved the taste so much that I guessed few ingredients and added my flavor to it . Here is my Recipe of Singapore Rice , no no....! neither did I visit Singapore but just guessing the ingredients . INGREDIENTS :  1 cup or more boiled chicken boneless  1 and 1/2 cup cooked basmati rice  2 -3 whole red chillies  6 -7 cloves of finely chopped garlic  2 tbsp schezwan chutney 1 tbsp soya sauce  1 tbsp apple cider vinegar  3-4 spring onions  1/

Sweet and sour Chicken

Sweet and Sour Chicken is delicious and different type of Indo Chinese cuisine , in which chicken is deep fried and saute with bell peppers , sweet , sour and spicy sauce . If you love varieties and do not mind a taste that has a bit of sweetness to it , then this one is definitely for you .  Here is my Recipe of Sweet and sour Chicken .  INGREDIENTS :  300 gms chicken boneless ( thigh portion )  1/2 tsp black pepper  1 tsp soya sauce  2 tbsp chilly sauce  1 small green capsicum  1 small red bell pepper  1 small yellow bell pepper  1/4 cup pine apple ( chopped into small cubes )  2 -3 tbsp honey 2 tbsp apple cidar vinegar  2-3 tbsp tomato ketch up  1 tbsp chilly sauce 1 tbsp soya sauce  1 tsp finely chopped ginger  6-7 cloves of finely chopped ginger  1/4 cup chicken stock or pine apple juice  1 tbsp cornflour + 1 cup cornflour  1 beaten egg  1/4 cup water   salt to taste oil  METHOD :  Clean , wash and chop

Mexican Stuffed Bell Peppers

Mexican Stuffed Bell Peppers are delicious one dish meal served as main course. The best thing about this recipe is , you can have it without guilt as it is healthy and tasty too. For more healthier version add brown Basmati rice instead of normal Basmati Rice or you can simply avoid the step of adding cooked rice .  If you are following any kind of diet , say for example  , ketogenic diet , then this is an apt " Recipe " for you . Do not add rice , rest the recipe is keto complaint. Here is my recipe of Mexican stuffed Bell Peppers. INGREDIENTS :  1/2 kg chicken / mutton mince  1 finely chopped onion  3-4 red and green capsicum  170 gms tomatoes  2-3 whole green chillies 1 cup cooked basmati rice  1 cups cheddar cheese ( britania )  4 cloves of finely chopped garlic  1-2 tsp red chilli powder  1/2 tsp cumin powder  200 gms enchilada sauce  180 gms tomato paste METHOD :  Grill the whole green chillies on gas or in ove

Enchilada Sauce

Enchilada Sauce is a Mexican sauce, particularly made of tomato and chilly sauce. This sauce is topped over various baked dishes , more over particular used as one of the main ingredients in making Enchiladas. The best part of this sauce is you can make a big batch and then store in a glass jar and freeze it for further use. Here is the Recipe of Enchilada Sauce .....! Easy , peasy and delicious . INGREDIENTS : 1 and 1/2 tbsp all poupose flour  3 cups chicken stalk  170 gms tomatoes paste / tomatoes 1 tsp cumin powder ( roasted and grounded )  1 tsp garlic powder  1/2 tsp onion powder  1 tsp mixed herbs  salt to taste  2-3 tbsp red chilly powder  1/4 tsp sugar 2 tbsp vegetable oil  METHOD :  Blanch , peel and grind the tomatoes in a food processor. ( skip this step,  if you are not using ready made tomato paste ) Heat oil in a pan , add flour and stir continuously until it turns smooth and no lumps formed , if any, break it with your spa
